A busy mom of four daughters, d’Arabian is a master at working healthy ingredients into kid-friendly meals in unexpected and creative ways. For instance, take chia seeds. “I love how these little seeds filled with fiber, protein, and healthy fats plump up into a creamy, thick texture, which my kids like,” says d’Arabian, who often adds the seeds to baked goods either along with the dry ingredients or by mixing with a few spoonfuls of water to make a gel. “Chia seeds add invisible nutrition and structure – a bonus for gluten-free baked goods, which can be crumbly. I also make chia puddings for breakfast, or sweeter, chocolate versions for dessert,” she says.
